Introduction

Lemang cooking is a simple processing of agricultural products, but it has some weaknesses that can be minimized. This study aims to analyze the effect of variations of cooking time on the performance of vertical type of electric lemang. The study was conducted in the agricultural engineering laboratory, Faculty of Agriculture, University of North Sumatra (USU) from March to May 2016. The method used was a complete non-factorial random design with three variations of cooking time, namely 80 minutes, 90 minutes, and 100 minutes, respectively -The is repeated three times. The observed parameters include the effective capacity of the tools and the results of organoleptic tests.
